Course Description
Take a deep dive into environmental monitoring during this in-person course at our new facility on the UW-Madison campus in Babcock Hall, with our CDR experts and industry partners. Engage in lectures, demonstrations, and lots of hands-on activities. Evaluate environmental monitoring through live case studies on root cause analysis and participate in troubleshooting microbial issues in CDR’s licensed and operating Grade B food manufacturing plant.

Learning Objectives

  • Describe the basic principles and terms of environmental monitoring, its necessary program components, and areas in the environment to consider monitoring.
  • Identify what pathogens and environmental indicator organisms to be aware of in dairy manufacturing environments and the importance in maintaining food safety.
  • Evaluate Listeria monocytogenes in the RTE Food Guidance document, reviewing clean break expectations, and Whole Genome Sequencing (WGS) as a tool.
  • Develop a swabbing/sampling plan and discuss factors that change frequency and risks.
  • Apply the “Seek and Destroy” philosophy and exercise root cause analysis rationale through case study scenarios.
  • Understand FDA expectations as it relates to environmental monitoring.
