Course Description
Discover the world of food fraud through the lens of a dairy manufacturer. Learn the history of food fraud and discuss the different categories of food fraud. During this one-day course we’ll explore what a fraud vulnerability assessment looks like, and actively create a plan to mitigate the evaluated risks. We’ll conclude by reviewing available test methods to detect evidence of food fraud in non-dairy and dairy ingredients.
Learning Objectives
- Define food fraud and describe the different categories of food fraud.
- Describe the history of food fraud and identify future potential food fraud issues.
- Evaluate methods to conduct a robust Food Fraud Vulnerability Assessment.
- Demonstrate how to implement a Food Fraud Mitigation Plan.
- Identify and evaluate the test methods available to detect various sources of food fraud.
