Master Cheesemaker Short Course - Exploring and Investigating Cheese Defects (in-person)

February 15-16, 2023

Please join us for the 2023 Master Cheesemaker Short Course where we will examine and troubleshoot common cheese defects.

This course will cover a broad range of cheese defects and related issues including milk quality and cheese composition. We will dive deep on topics such as calcium lactate crystals and unwanted gas formation and explore the latest genomic techniques and other analytical tools to help diagnose defects. Additionally, we will evaluate defective cheeses to train our pallets to recognize issues and link them to solutions. This short course will be led by Center for Dairy Research staff and other industry experts including Wisconsin Master Cheesemakers.
