Cheese Industry, Research, and Applications Program
The University of Wisconsin has a long and proud history of cheese research and outreach activities. The Cheese Industry, Research, and Applications Program believes it takes both practical experience and thorough scientific knowledge of the cheesemaking process to assist our dairy industry with their various manufacturing and cheese performance questions. Our Program staff includes licensed, multi-generational cheesemakers working with world renowned cheese technologists and scientists in an effort to maintain and search out new growth opportunities for cheese whether for retail sale or utilized in food systems. This is accomplished through leadership in innovative strategic research, technology development, outreach, and continuing education through multiple short courses taught by our staff.
