Dean Sommer, cheese technologist for the Wisconsin Center for Dairy Research, will share the latest in cheese research as well as exciting new cheese functionalities. Pizzeria owners and operators will leave with a better understanding of how to make the most of cheese flavor possibilities, how to find a low fat cheese with superior texture and melt, and how to determine which cheeses have optimal browning effect.
