Outreach/Services

We provide individual assistance to manufacturers exploring new specialty cheese opportunities. CDR staff will discuss concepts and then assist in creating a plan for manufacturing cheese. CDR can run research trials at the UW Dairy Pilot Plant and also assist with plant trials at your company to develop new products.

Wisconsin Master Cheesemaker Program ®
Unique in the US, this program has an established curriculum leading to the title Wisconsin Master Cheesemaker. Cheese makers obtain a solid foundation of knowledge needed to successfully produce and market their cheese. Topics cover the basic principles of cheese manufacturing as well as more specialized subjects like Water and Waste Management and Business and Marketing. Artisan Cheese Seminars
These training seminars host cheese makers from around the world who share their expertise with Wisconsin's cheese makers. As they learn new techniques for cheese manufacture by working side by side with cheese artisans from other countries, the eyes and imaginations of Wisconsin cheese makers are opened to the possibilities of creating new cheeses for specialty markets. Seminars have covered Dutch-eyed cheese, Danish cheeses, Swiss cheeses, Hispanic cheeses and British cheeses. Short Courses
